Vietnamese Beef and Pineapple Stir-fry

1 tablespoon olive oil
500g beef rump steak
1 onion, thinly sliced
1 teaspoon chopped ginger
2 cloves garlic, crushed
1/4 cabbage, shredded
1 tablespoon fish sauce
1 tomato, roughly chopped
1 cup pineapple pieces
1/3 cup mint
1/3 cup coriander
juice of 1 lime

1. Heat oil in a non-stick frying pan. Add beef, onion, ginger and garlic and cook for 2-3 minutes.

2. Add cabbage and fish sauce and cook a further 3-4 minutes.

3. Stir in tomato, pineapple pieces, herbs and lime juice then serve immediately.
