What’s for Dinner this week?

For my wonderful members- This weeks menu consists of:
Slow cooked beef and pumpkin- so tasty!!!
Oodles of Noodles Soup with Pork Balls- My 5 year old daughter said “awesome mum” when eating this one.
Fish with spinach lentils- So healthy and a great citrus accompaniment with the fish.
Baked Chicken Risotto- A lovely creamy risotto without all of the hard work!
Tomato and Bocconcini Frittata- Simple yet delicious flavours with oozing bocconcini cheese- Fantastic.

Step by Step- Herb and Polenta Chicken Nuggets

This one is a quick and easy fabulous alternative to processed chicken nuggets and chips. The polenta also adds a lovely crunchy coating and the potatoes are scrumptious!! Your kids will love this one.

HERB AND POLENTA CHICKEN NUGGETS

Preparation time: 15 minutes
Cooking time: 25 minutes
750g desiree potatoes, thinly sliced
1 tablespoon olive oil
sea salt, to taste
2 tablespoons thyme leaves
750g chicken thigh fillets, trimmed of fat
juice of 1 lemon
½ cup polenta
¼ cup parsley
olive oil spray
steamed broccoli, to serve

  1. Pre-heat oven to 200ºC. Place potato slices on a large baking tray. Drizzle with oil and season with salt and 1 tablespoon of the thyme. Place in oven for 25 minutes or until golden.

  2. Cut the chicken fillets in half then squeeze over lemon juice. Mix together the polenta, remaining thyme and parsley then place on a flat plat. Coat chicken pieces in polenta mixture then place on a lined baking tray.

  3. Add chicken to oven and bake for 15-20 minutes. (You want the coating to be crunchy and the chicken tender and moist.)

  4. Serve chicken with potatoes, broccoli and sweet chilli or tomato sauce if desired.

What’s for dinner this week?

Oohh with this horrible cold and wet weather it’s time to have some comfort food (without the comforting fat content of course!) Here’s what I’ve come up with- soooo yummy!!!
Cauliflower and potato soup with bacon croutons- great with fresh crusty seeded bread.
Sweet sesame pork- Fantastic crunchy pork with a sweet chilli glaze.
Fettuccine carbonara- beautiful creamy pasta without all of the guilt!
Lamb kebabs- threaded onto rosemary stalks to infuse the flavour.
Light butter chicken- with all the taste but not the fat!

Okay here’s what’s on the menu this week.

Sweet Chilli Salmon with Lemon and Zucchini Pilaf (Sweet with the sour- delicious!)
Osso Bucco (In the slow cooker)
Sausage and Bean Macaroni (A hearty tangy tomato based pasta)
Herb and Polenta Chicken Nuggets (My kids think these are fantastic!!!)
Sesame and Sugar Snap Peas Stir-Fry (A nice vegetarian option)

Winter Feel Good recipes

I woke up this morning feeling quite horrible. My throat was hurting, my head throbbing and I was just feeling yuk. That inspired me to make some Feel Good Chicken noodle soup. I think I will start a new recipe section featuring recipes that just make you feel good when you’re cold and sick. Please feel free to add suggestions and I will endeavour to come up with the recipes.

Feel Good Chicken Noodle SoupIMG_3359 400pix
1 litre chicken stock
1 tablespoon soy sauce
100g cauliflower, sliced
2 sticks celery, sliced
1 carrot, sliced
100g button mushrooms, sliced
2 spring onions, sliced
300g chicken thigh fillets, trimmed and sliced
50g thin spaghetti, broken into small pieces
2 eggs, lightly beaten

1.  Place stock and soy sauce in a large saucepan. Add vegetables and bring to the boil.

2. Once boiling, reduce heat to a simmer and add chicken.

3. Add spaghetti and simmer for 8 minutes. Stir through eggs and serve.

Fussy children….

My kids loved dinner again tonight- which is great but doesn’t always happen. I have to say that my kids are pretty good eaters but I don’t really give them a choice. I cook 1 dinner for the family and there’s no alternatives. If they don’t eat it- there’s no dinner. (They soon eat when they realise it’s all they get.) Repeated exposure to different foods is the only way. Does anyone have problems with fussy kids and what do you guys do to get your children to eat?

I walked the shops this week to get some inspiration for my recipes. Here’s what I came up with:

Bacon, Tomato and Spinach Penne- an absolute hit with my kids!
Slow cooked lamb casserole- Comfort food.
Caramelised pumkin, rocket and cherry tomato pizza- Delicious.
Potato pot pies- Another favourite with the kids and they just love having their own dish.
Baked chicken with herbed cous cous- This is a very healthy one with loads of flavour.

Here’s what’s on the menu this week:

Soy and orange chicken- Moist in the inside and crisp on the outside!
Slow cooked Beef casserole- Ingredients in, turn on and forget all day!!
Split pea and ham soup- To warm you up on the inside.
Lentil and Vegetable Filo Wraps- delicious.
Fish with lemon and garlic bok choy- a great serve of goodness.

What will we cook today?? This is always the question on our lips isn’t it. Well, this week I have some delicious warming dishes for you.

The weekly meal plan looks like this:
Spaghetti Quiche- this is great- no pastry!!
Lamb with parmesan and lentil mash- YUM.
Tomato and Vegetable soup- to make us feel great on the inside.
Thai green chicken curry- for a bit of spice.
and finally Corn and rice enchiladas.

These fantastic recipes will be added on Thursday!
