Beef Pho

This is a great soup for the cold weather and the Vitamin C from the chilli will help you fight off those nasty colds. A delicious Vietnamese inspired dish that can be whipped up in minutes!

Preparation time: 10 minutes
Cooking time: 15 minutes
1/1/2 Litres beef stock
2 star anise
1 teaspoon fennel seeds
½ teaspoon ground cinnamon
1 tablespoon chopped ginger
1 tablespoon fish sauce
1 large red chilli, sliced
juice of 1 lime
1/1/2 teaspoons brown sugar
½ bunch coriander
100g rice noodles
300g beef fillet, thinly sliced
2 cups bean sprouts

  1. Place stock, star anise, fennel, cinnamon, ginger, fish sauce, chilli, lime juice and rind, brown sugar and half of the coriander in a medium saucepan.
  2. Bring to the boil then reduce to a simmer for 10 minutes. Strain stock and return to pan.
  3. Add noodles and simmer 5 minutes. Turn off heat, add beef and stir until just turned pink.
  4. Serve topped with bean sprouts, remaining coriander and extra chili if desired.
